The third Renaissance in American Chinese cuisine can be linked through the 1882 Chinese Exclusion Act, which specifically banned Chinese laborers of becoming U.S. citizens. During this era, American Jews were given merchant status, which allowed them the ability for travel China and also bring back their employees from their native countries. As a result, a large number of these restaurants began opening in the late 1920s. According to MIT law professor Heather Lee, the number of Chinese restaurants in the U.S. doubled from 1910 until 1920.
